BANANA BRAN MUFFINS 
1 c. sifted flour
3 tbsp. sugar
2 1/2 tsp. baking powder
1 c. whole bran
1 well beaten egg
1 c. mashed ripe banana
1/4 c. milk
1 tbsp. salad oil or melted shortening

Sift together flour, sugar, baking powder and salt. Stir in bran. Mix remaining ingredients. Add all at once to flour mixture stirring just until moistened. Fill greased muffin pans 2/3 full. Bake at 400 degrees for 20-25 minutes. Makes about 10 muffins.
