CREAM OF BROCCOLI SOUP 
2 (10 oz.) pkgs. chopped frozen broccoli
1/4 c. chopped onion
2 cans chicken broth
2 tbsp. butter
2 tbsp. flour
2 c. half and half (substitute liquid coffee creamer)
1 tsp. salt
1/2 tsp. pepper

Combine broccoli, onion and chicken broth. Bring to a boil, simmer for 10 minutes. Or zap in microwave on high for 10 to 12 minutes. Blend in food processor until smooth. Melt butter, stir in flour and add cream and stir until thick. Add seasonings and broccoli puree. Cook until soup bubbles. Serves 6 to 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
