SHRIMP IN FOIL 
1 lb. shrimp, peeled and deveined
1 c. salsa, divided
1 c. Mozzarella cheese, shredded and divided
12 ripe olives, sliced and divided
Vegetable cooking spray
Foil

Cut 15 x 12 inch foil and fold in half. Trim out edge so when unfolded will be in shape of heart. Repeat 3 more times. Coat inside of each heart with vegetable spray. Place 1/4 of shrimp on each heart and top with 1/4 cup of salsa. Fold foil together to enclose shrimp salsa mixture and crimp edges together to seal. Place on baking sheet and cook at 400 degrees for 10 to 12 minutes. Cut an X in top of each foil and top with 1/4 of olives and 1/4 of cheese. Bake for 1 to 2 minutes more until cheese melts. May be served over rice.
