CHICKEN CACCIATORE 
1 can crushed Italian tomatoes, lg.
1 (8 oz.) can tomato sauce, or larger
1 sliced onion
1 sliced pepper
Mushrooms, sliced; optional
1 lb. boneless chicken breast, cut up
Oregano
Basil
Parsley
Italian seasoning

In shallow baking pan, combine tomatoes, tomato sauce. Sprinkle with oregano, basil, parsley, and Italian seasonings. Blend in. Then add cut up chicken, onions, and peppers. You may have to cover with extra tomato sauce.

Bake uncovered at 325 degrees until vegetables are tender, about 90 minutes.
