SOUTH OF THE BORDER QUICHE 
10 eggs
1/2 c. flour
1 tsp. baking powder
1 tsp. salt
1/4 c. butter, melted
8 oz. green chiles, chopped
1 lb. Monterey Jack cheese, grated
2 c. low-fat cottage cheese

Butter a 9 x 13 pan. In large bowl beat eggs until frothy. Add flour, baking powder and salt. Blend well. Mix in the melted butter, chiles, and cheese. Pour into buttered pan. Bake at 400 degrees for 15 minutes. Lower heat to 350 degrees and bake 40 minutes. Cut into small squares and serve warm.

OPTIONAL INGREDIENTS: 1/2 cup diced onions, 1/2 cup diced mushrooms, 1/2 c. diced bell peppers.
