CHICKEN CACCIATORE 
1/2 c. onion
1/2 c. green pepper
1 c. mushrooms, sliced
1 tbsp. plus 1 tsp. vegetable oil
12 oz. cooked chicken, cut into 1 inch strips
16 olives, halved
2 c. whole tomatoes, cut up
1 c. tomato sauce
Black pepper to season
Garlic powder to season
Red hot pepper to season

Saute onion, pepper and mushrooms in vegetable oil. Add tomatoes, tomato sauce and seasonings. Mix well. Simmer 20 minutes. Add chicken pieces and olives. Simmer until chicken is heated through. Serve over 1/2 cup cooked rice or 1/2 cup cooked pasta. 4 servings.
