LOUISIANA CORN CASSEROLE 
1 stick butter
1 chopped onion
2 (16 oz.) cans cream corn
2 sm. bell peppers, chopped
1 sm. jar pimento
2 tsp. sugar
1 egg
1 c. minute rice
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
Grated cheese

Saute onion and bell pepper in butter. Add corn, rice, pimento, sugar, egg, and seasonings. Mix well. Pour into a buttered 9 x 13 x 2 inch dish and bake at 350 degrees for 30 to 40 minutes. Top with cheese in the last 10 minutes of baking time.
