ORANGE CHICKEN 
1 (3 to 3 1/2 lb.) frying chicken
1 clove garlic, minced or pressed
2 tbsp. butter
1 tbsp. soy sauce
Dash of pepper
4 tbsp. fresh orange juice
1 tbsp. brown sugar
2 tsp. orange rind

Cut chicken into serving pieces and arrange in a baking dish with lid. Add garlic and dot with butter. Sprinkle with soy sauce and black pepper. Cover and bake at 350 degrees for about 30 minutes. Pour orange juice and rind over chicken and sprinkle with brown sugar. Bake another 15 to 20 minutes. May be prepared the day before. Reheat at 300 degrees for 15 to 20 minutes. Garnish with fresh sliced oranges.
