CRISP COCONUT OATIES 
1/2 c. softened butter
1/2 c. granulated sugar
1/2 c. brown sugar
1 beaten egg
1 tsp. vanilla extract
1 tsp. coconut flavor
1 c. all purpose flour
1/2 tsp. salt (opt.)
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. flaked coconut
1 c. crisp rice cereal
1 c. quick rolled oats

With an electric mixer, cream butter and sugars. When mixture is light and fluffy, stir in egg, vanilla and coconut flavor; beat well and set aside. Sift together flour, salt, baking powder and soda. Stir this mixture into the butter/sugar mixture; blend well, then stir in coconut, oats and rice cereal. Roll into 1" or 1 1/2" balls. Bake at 325 degrees for 12 minutes or until the cookies are golden brown. Makes 3 to 4 1/2 dozen.
