GARLIC FRITTERS 
10 lg. cloves fresh garlic
1/4 tsp. salt
6 tbsp. butter
1 c. water
1 c. flour
4 eggs
3-4 lb. fat for deep frying
1/4 c. sour cream
1/4 c. grated Parmesan cheese
Dash powdered oregano

Chop garlic fine and add salt. Mash into a paste. In saucepan, place butter, garlic and water. Bring to a boil. Add flour, stirring quickly into a mass. Remove from heat. Add eggs, one at a time, beating certain to fully incorporate each one.

Form the dough into small bite-sized mounds and deep fry at about 370 degrees until golden brown. Drain on a towel. Cut each fritter into 2 pieces. Mix sour cream, Parmesan and oregano; place 1/2 teaspoon of mixture on half of each fritter, top with other half. For more garlic flavor, try adding some fresh minced garlic to the filling as well. Makes about 4 dozen tasty hors d'oeuvres or snacks.
