CAJUN RICE WITH APPLES AND
RAISINS
 
1/4 c. oil
1 c. chopped green peppers
1 c. chopped onions
1/2 c. chopped pecans
1/2 c. raisins
4 tbsp. butter
1 1/2 c. rice
2 tsp. salt
1 1/2 tsp. white pepper
1 tsp. cayenne pepper
1 tsp. garlic powder
1 tsp. mustard
1/2 tsp. black pepper
3 c. soup stock
2 c. chopped unpeeled apples

Saute onions and green peppers in oil. Add nuts. Add raisins and butter and cook until soft. Add rice and seasonings and saute for 2-3 minutes. Stir in stock. Add apples. Cover and bring to a boil. Lower heat and simmer 5 minutes. Cover and let sit 30 minutes. Serve immediately. Serves 8-10.
