PINEAPPLE FRUIT CAKE 
2 eggs
2 c. flour
2 tsp. baking soda
1 tsp. vanilla
1 tsp. pineapple flavoring
2 c. sugar
1 c. nuts (any kind
1 (16 or 20 oz.) can crushed pineapple and juice

Mix all ingredients together and pour into pre-sprayed 9x13 pan. Bake at 350 degrees for 45 minutes.

FROSTING:

8 oz. soft cream cheese
1/2 c. soft butter
1 1/3 c. powdered sugar
1 tsp. vanilla
1/2 tsp. pineapple flavoring

Mix frosting ingredients together and pour over hot cake. Sprinkle on coconut if desired.
