SKILLET BEEF CHOP SUEY 
1 1/2 c. chopped celery
1 lg. onion, sliced
1 c. green pepper strips
1 sm. jar sliced mushrooms
2 tbsp. oil
Salt to taste
Garlic to taste
Pepper to taste
1 lb. ground beef, or round steak strips

Saute vegetables in oil until they begin to brown, but are still crisp. Remove. Set aside. Brown meat. Add seasonings to taste and return vegetables to pan.

Mix:

2 tbsp. cornstarch
1 1/3 c. water
4 tbsp. soy sauce

Add mix to pan and cook until thick. Add 1 1/2 cups boiling water and 1 1/2 cups minute rice. Cover and let sit for 5 minutes.
