2 1/4 c. sifted cake flour
3 tsp. baking powder
16 maraschino cherries, cut into 1/8ths or sm. pieces
3 or 4 unbeaten egg whites
1 1/3 c. sugar
1/2 c. chopped nuts
1/2 c. shortening
1/4 c. cherry juice
1 tsp. salt
1/2 c. milk

Sift dry ingredients together, add shortening, cherry juice, cherries and milk. Beat 2 minutes. Add whites and beat another 2 minutes. Fold in chopped nuts. Bake in 2 greased 8 inch layer pans at 350 degrees for 30 to 35 minutes. DO NOT OVER BAKE THIS CAKE!! Frost with 7 Minute Frosting with a few chopped nuts and cherries added.

When I was a child this was my favorite birthday cake.
