SALMON AND MACARONI | |
1 c. cooked macaroni (measured dry) 1 lg. can canned salmon Drain salmon and remove bones and skin. WHITE SAUCE: 2 tbsp. butter 2 c. milk 3 tbsp. flour 1 tsp. salt Mix flour and salt together; set aside. Heat butter and milk in saucepan. When milk begins to boil, add flour and salt mixture. Stir constantly until mixture thickens. Grease a 2 quart casserole (or use cooking spray). Arrange layers of macaroni and salmon in casserole dish, ending with salmon on the top. Pour white sauce over top layer. In a small saucepan or microwave bowl, melt 2 tablespoons to 1/4 cup butter. When butter is melted, add chunks of bread (day old works best) and soak. Remove bread chunks and place on top of white sauce layer. Bake casserole in 350 degree oven for 30 minutes. (NOTE: Casserole may be assembled hours ahead or the night before and refrigerated until baking time.) |
