BORSCHT 
3 to 4 lb. spareribs
5 c. water
Salt
Pepper
4 med. beets, diced
2 or 3 med. potatoes, diced
3 or 4 carrots, diced
2 med. onions, diced
Parsley
Dill
Beet greens, optional
1 can tomatoes
Vinegar to taste
Sour cream

Brown spareribs; season with salt and pepper. Cover with 5 cups water and simmer about 1/2 hour. Prepare vegetables - peel and dice beets, dice potatoes, carrots and onions, wash and cut up the beet greens. Add to meat in large pan. Add parsley and dill; simmer until vegetables are tender, for about 1/2 hour. Stir in the tomatoes and 1 to 2 tablespoons of vinegar, to taste. Simmer another 10 to 15 minutes. Serve hot topped with 1 tablespoon of sour cream.
