JOE FROGGERS 
"Joe Froggers" are made from a recipe that is over 100 years old. "Uncle Joe" lived on the edge of a frog pond in Marblehead, Massachusetts. He made these cookies to give to the children. They gave them the name "Joe Froggers". The recipe was given to the local bake shop on his death and children bought them for a penny apiece. Today, they are served in the Public House in the colonial village in Sturbridge, Massachusetts.

3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. ginger
3/4 tsp. cloves
3/4 tsp. nutmeg
1/4 tsp. allspice
3/4 c. shortening
3/4 c. sugar
1 c. light molasses
1 tbsp. rum extract
1/3 c. water

Mix and sift flour, baking soda, salt and spices. Cream shortening and sugar. Add molasses and rum extract; beat well. Add flour mixture and water alternately, beating until well blended after each addition. Wrap dough in foil; chill overnight.

Roll dough one-half at a time, about 1/4-inch thick. Cut with floured 4-inch round cookie cutter. Bake on lightly greased cookie sheets. Bake at 375°F for 8 to 9 minutes or until just done but not brown around edges. Cool on racks. Store in airtight container.

Makes two dozen cookies. Enjoy!
