ENCHILADAS 
1 lb. hamburger
1 med. onion, chopped
1 pkg. corn tortillas
2 pkgs. Longhorn cheese, grated
2 cans mild enchilada sauce

Brown ground beef with onion, save fat drippings. Place 1 can enchilada sauce in shallow dish; dip tortilla shell - 1 at a time in sauce, then heat in small skillet with fat drippings. The shell will bend and not break. Take shell out of skillet, place about 2 tablespoons of the hamburger with onions in center of shell, lengthwise. Add small amount of cheese and roll the tortilla.

Place in oblong baking dish, greased, continue until all shells are used. Take all remaining enchilada sauce and pour over rolled tortilla. Top with remainder of grated cheese. Bake in 350 degree oven for about 30 minutes.
