MIXED GREEK SALAD 
1/2 head lettuce
3 celery stalks, chopped (leaves included)
1 med. sized cucumber
1 sm. onion, sliced thin
2 med. tomatoes, sliced thin
1/3 c. pure olive oil
1/2 green pepper, chopped
8 black olives
4 pieces feta cheese
4 salted sardines
1 tsp. oregano
3 tbsp. vinegar (or juice of a lemon)

Wash and clean all vegetables thoroughly. Cut lettuce into 1 inch pieces, and cut all other vegetables into bowl. Wash sardines to remove all salt and use on top of salad. Mix all ingredients well, add seasonings and toss until thoroughly covered with seasonings. Sprinkle with oregano and serve immediately. Serves 4-5.
