PECAN-PUMPKIN BREAD | |
2 1/2 c. white flour 1 c. whole wheat flour 3 c. sugar 2 tsp. baking soda 1 1/2 tsp. salt 2 tsp. cinnamon 1 tsp. nutmeg 4 eggs 1 c. cooking oil 2/3 c. water 16 oz. can pumpkin 1 c. chopped pecans Preheat oven to 350 degrees. Grease and flour bottoms only of two 9x5 loaf pans. Sift dry ingredients together and place in large bowl. In medium bowl combine oil, water, eggs and pumpkin. Add to flour mixture and mix well. Fold in pecans. Pour into prepared loaf pans. Bake at 350 degrees for 60-70 minutes or until toothpick comes out clean. Cool 10 minutes then remove to cooling rack. Excellent served with soft cream cheese. |
