ROSICA'S PINEAPPLE COOL WHIP
FROSTING
 
I was making some other frosting and by accident added the pineapple juice instead of milk and it worked pretty good! So, don't be afraid to try new ingredients in your old recipes.

1 (16 oz.) tub Cool Whip
1 (8 oz.) pkg. cream cheese, softened
1/4 cup confectioners' sugar (optional)
1 (8 oz.) can sliced pineapple with juice (I use Dole)
cake of your choice

Beat cream cheese by itself until creamy. Add Cool Whip. Add confectioners' sugar, if desired.

Note: The confectioner's sugar is for the frosting not to melt (hot weather) and also makes it sweeter but will be less calories if you don't use it (perfect for cold weather).

Add only the pineapple juice (save the slices for decoration).

Refrigerate frosting until ready to use.

TO FROST:

Make sure the cake is completely cold (not even warm!) before covering it with the frosting.

Use the pineapples slices to decorate the cake. Also, add some cherries, coconut, pecans and any other ingredients that comes to your imagination!
