SWEET POTATO MUFFINS 
1 c. sweet potatoes, mashed
1/2 c. butter
1 c. sugar
2 eggs
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 c. milk
1/2 c. chopped pecans
1/2 c. chopped raisins

Cream butter, sugar, and eggs. Add mashed sweet potatoes and mix well. Mix all dry ingredients together and add to butter mixture alternating with milk. Add nuts and raisins. Put into muffin tins and bake at 375 degrees for 25 minutes. Grease tins well. Makes 24 muffins.
