PINEAPPLE UPSIDE DOWN CAKE 
1 1/2 c. flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/3 c. butter
2/3 c. milk
1 tsp. vanilla
1 egg
1 stick butter
1 c. brown sugar
1 can sliced pineapple, drained
Maraschino cherries

Melt butter (1 stick) in oblong pan. Top with brown sugar, pineapple slices and cherries. Stir flour, sugar, baking powder and salt together. Add butter, milk and flavoring. Beat 2 minutes at medium speed. Add eggs and beat 2 more minutes. Pour batter over pineapple slices and bake at 350 degrees for 30 to 35 minutes.
