BANANA PUDDING 
1/2 c. sugar
2 tbsp. flour
1 tsp. vanilla
1 egg (or 2 egg yolks)
1 1/2 c. milk
4-6 bananas
1 box vanilla wafers

Mix together flour and sugar. Add milk and egg; cook over medium heat, stirring constantly until thickened. Then add vanilla, stir well. Remove from heat.

Line medium baking dish or large glass pie pan with vanilla wafers. Cut bananas over wafers, add another layer wafers, then bananas then a last layer of wafers. Pour pudding over layers and top with meringue. Bake at 425 degrees for 5 minutes or until brown.

MERINGUE:

2 egg whites
1/4 tsp. cream of tartar
1/2 tsp. vanilla
4 tbsp. sugar

Beat egg whites with vanilla and cream of tartar until stiff. Add sugar and continue beating until glossy peaks form a sugar is dissolved. Spread over pudding, sealing the edges. Bake as directed or at 350 degrees for 12-15 minutes.
