MAPLE CHIFFON CAKE 
2 c. flour
3/4 c. sugar
3/4 c. brown sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. oil
7 egg yolks
2 tsp. maple flavoring
7 egg whites
3/4 c. cold water

GLAZE:

1/3 c. butter
2 c. powdered sugar
1/2 tsp. maple flavoring
2-4 tbsp. hot water

Cake: Mix all dry ingredients. Make a well and add oil, egg yolks, water, and flavoring. Beat we.. Beat egg whites until stiff peaks form. Gently fold in mixed batter. Grease slightly a 9 x 13 inch and a smaller pan or 2 (10 x 4 inch) tube pan. Bake until top springs back (325 degrees), approximately 30 minutes (tube pan, 60 minutes).

Glaze: Heat butter over medium heat until light brown; cool slightly. Blend in sugar and flavoring; stir in water, 1 tablespoon at a time. Spread over cake, letting some drizzle down side.
