NORWEGIAN-AMERICAN BLOTTEKAKE 
1 cake mix
3 eggs
1/3 c. oil
3 1/2 pts. heavy whipping cream
3 tbsp. sugar
1 bag sweetened frozen strawberries

1. Bake cake as directed.

2. Beat cream with mixer. Add sugar gradually. When cream forms peaks it is finished.

3. Add sugar to strawberries if not presweetened.

4. Cut cake in half (height) so you have two circular pieces. Put bottom half on plate. Add strawberries (save 10 to decorate top.) Add 1/3 of cream. put top of cake on. Use rest of cream on the top and sides. Decorate with remaining strawberries.
