BECKY'S WHITE BREAD
1 pkg. dry yeast
1/2 c. warm water
1 3/4 c. scalded milk
2 tbsp. honey
2 tsp. salt
2 tbsp. cooking oil
5-6 c. flour

Dissolve yeast in warm water. Combine milk, honey, salt, and oil. Cool to lukewarm; stir in yeast, mixing well. Add flour. Knead. Cover. Let rise until double. Punch down; let rise again. Punch down. Shape into 2 loaves; place in greased loaf pans. Let rise until double. Bake at 350 degrees for 25- 30 minutes.

For Raisin Cinnamon Bread: Before shaping loaves, knead in about 1 cup of raisins per loaf (this way you may make 1 raisin loaf and 1 plain loaf, if desired). Press and roll dough into a rectangle that is as wide as the loaf pan. Spread the dough with melted butter and then sprinkle with a cinnamon sugar mixture. Roll into a loaf and place in pan with the seam down. Bake as above.

Note: For more detailed directions for making bread, see the Whole Wheat Bread recipe.
