APRICOT GLAZED SWEET POTATOES | |
2 1/2 lb. sweet potatoes, cooked, peeled mashed 3 eggs, beaten 1/4 c. honey 1/4 c. melted butter 1 or 2 tbsp. brandy, optional 1 pinch cinnamon 1 pinch ginger 1 pinch nutmeg Season to taste TOPPING: 1/4 c. butter 1/4 c. apricot jam (made with honey) 1 1 2/ tsp. cinnamon 3/4 c. coarsely chopped pecans Place sweet potatoes, eggs, honey, melted butter, cinnamon, ginger, nugmeg and season in a bowl. Mix with a wooden spoon or an electric beater until smooth. Turn sweet potatoes into a decorative baking dish. Cover and bake in a preheated 350 degree oven for 40 minutes. Place butter and apricot jam in a sauce pan and heat until melted. Sprinkle pecans over sweet potatoes and pour apricot jam over the top. Broil until topping is bubbly and glazed. |
