WHOLE NUT CHRISTMAS BREAD | |
Rather expensive, but worth it. 1 1/2 c. flour 1 c. sugar 1 tsp. baking powder 1/2 tsp. salt 1 lb. whole pitted dates 2 c. whole walnuts 1 1/2 c. whole Brazil nuts (I use 1 lb.) 2 c. pecans (whole) 3 slices candied pineapple (cut) 8 oz. whole maraschino cherries, drained 1/4 c. sherry wine or other wine or liqueur 5 eggs 1 tsp. vanilla Sift together the dry ingredients into a large bowl. Beat the eggs, don't overbeat. Add vanilla. Stir into the flour mixture; add wine. Stir in the fruits and nuts. Bake in well greased and floured pans in 325 degree oven. Bake according to size of pans, possibly an hour, but test for doneness. (Can be baked in cans if one wants a round loaf.) Cool well and then wrap in Saran and foil. Refrigerate before serving for easy slicing with a sharp knife. |
