CHRISTMAS MORNING CINNAMON BREAD CUSTARD | |
8 slices cinnamon raisin bread 1 stick butter, melted 4 whole eggs 2 egg yolks 1/2 c. granulated sugar 3 c. milk 1 c. heavy cream 1 tbsp. vanilla extract Packaged, sliced cinnamon raisin bread works just fine, but a bakery- fresh loaf, cut into 8 1-inch thick slices, will make the dish even better. Brush both sides of each bread slice with butter and arrange in rows in buttered 9 x 12 inch baking dish. In a large bowl, beat together the whole eggs and egg yolks. Whisk in the granulated sugar, milk, cream, and vanilla. Pour the custard mixture over the bread slices. At this point you can either refrigerate the dish until later OR place the baking dish in a roasting pan and pour in enough warm water to reach halfway up the sides of the dish. Bake in the upper third of a preheated 350 degree oven for 25 minutes or until top is lightly browned and the custard is set. Transfer to rack and let rest for about 15 minutes. Cut into squares and serve as is or sprinkle lightly with confectioners sugar and berries. |
