MICROWAVE CINNAMON APPLE SLICES 
2 sm. apples, cored and sliced 1/2 inch thick
1 tbsp. lemon juice
2 tsp. butter
1 1/2 tsp. honey
1/2 tsp. brandy or rum extract
1/4 tsp. cinnamon or nutmeg

Sprinkle apple slices with lemon juice and set aside. In a 9 inch microwavable pie plate, combine butter, honey and extract and microwave on high for 45 seconds or until butter melts. Add apple slices, turning to coat with mixture. Sprinkle with cinnamon. Cover with plastic wrap, turning back one corner to allow steam to escape. Microwave on high for 4 minutes, rotating plate 1/2 turn halfway through cooking. Using a pancake turner, carefully transfer apple slices to two serving plates, reserving butter mixture in pie pan. Return pie plate to oven and microwave on high for 1 1/2 minutes until mixture is slightly reduced. Drizzle half of mixture over each serving of apple slices.

Since microwave ovens vary in power, you may need to adjust your cooking time.
