RICE PUDDING 
3 tbsp. uncooked rice
4 tbsp. sugar
1 qt. milk
2 tsp. vanilla
Whipped cream or Cool Whip (optional)
2 tbsp. raisins (optional)

Combine rice, sugar, milk and vanilla in a casserole. Bake at 400 degrees for 2 hours, stirring frequently. Add milk as needed. Serve with whipped cream or Cool Whip, if desired. Note: 2 tablespoons raisins may be added before baking, if desired.
