CABBAGE PATCH STEW | |
1 lb. extra lean ground beef, browned 1 1/2 c. chopped cabbage 2 c. stewed tomatoes, cut up 1 c. water 1/2 c. diced celery 1 beef bouillon cube 1 pkg. (10 oz.) frozen peas, or 2 1/2 c. fresh peas In slow cooker, combine all ingredients except the peas. Simmer 7-8 hours on medium. Add peas and simmer another 30 minutes. Per Serving: Calories 183; Protein 17.9 gms; CHO 6.9 gms; Total Fat 9.6 gms; Cholesterol 47.3 mg; Sodium 153 mg. Diabetic Exchanges: Meat (medium fat) - 2; Vegetable - 1. Try adding fresh homemade rolls to this meal. Not only will the meal be irresistible, but it will be nutritionally balanced as well. |
