MOM'S RED CINNAMON APPLES | |
4 firm McIntosh apples 1 tbsp. vinegar 2 qts. water 1 c. sugar 2 c. water 30 red candy cinnamon hots 12 drops red food coloring 1 stick cinnamon bark, broken in half (3 inch long) 1 c. Medium sharp cheddar cheese, shredded 4 tbsp. Miracle Whip Core apples, making hole all the way through. Peel apples and place in solution of vinegar and 2 quarts of water while preparing syrup. This will keep apples from turning color. Mix sugar, water, candy cinnamon hots, food coloring and cinnamon sticks in a 2 quart saucepan. Place 4 apples in saucepan when all of the cinnamon hots and sugar have melted. Apples should float. Cook on low, simmering syrup until apples are soft, but not mushy. Test with a toothpick. Remove from pan with slotted spoon. Place on plate. Remove cinnamon sticks from syrup. Boil syrup down to a thick syrup. Refrigerate apples and syrup until ready to serve. Mix cheese and Miracle Whip. Stuff apples with cheese mixture. Place apples on lettuce leaf and drizzle syrup over. Top with a little Miracle Whip and sprinkle with a little paprika for color. |
