PANCAKES 
1 1/4 c. flour
2 tbsp. fructose
1 1/2 tsp. baking powder
1 c. skim milk
1/4 tsp. salt
2 egg replacers
2 tbsp. applesauce
Pam

In large bowl, combine flour, fructose, baking powder and salt. Set aside. In small bowl, combine egg replacers, applesauce, and milk. Add to flour mixture and blend well.

Spray non-stick skillet with Pam and heat over moderate heat. When skillet is hot, cook pancakes 4 at a time using 1/4 cup batter for each. Cook 2 1/2 to 3 minutes until bubbles form on top of pancakes. Turn, then cook 1 minute longer until bottom is deep brown. Makes 12 pancakes.
