SWEET POTATO CASSEROLE 
3 c. cooked mashed sweet potatoes
1 c. sugar (is good with only 1/2 c.)
1/2 c. melted butter
2 eggs, beaten
1 tsp. vanilla
1/3 c. milk (may use 1/2 c.)

Combine and put in 2 quart casserole. Cover with topping (below) and bake at 350 degrees for 25 minutes.

TOPPING:

1/2 c. packed brown sugar
1/4 c. flour or oatmeal
1/2 c. chopped pecans
2 1/2 tbsp. melted butter

Combine and sprinkle on potato mixture.
