ORANGE ROUGHY WITH SPINACH 
2 to 4 lg. fillets
1/2 chopped onion
Fresh Parmesan cheese
1 pkg. frozen chopped spinach
Bread crumbs or wheat germ

Saute chopped onion in olive oil. Add thawed, drained spinach and saute together to blend flavors. Place some in the middle of each fillet. Fold in half or roll; sprinkle with a little bread crumbs or wheat germ and cheese. Bake at 375 degrees for 20 to 30 minutes. Fish will be flaky when done.
