FISH CAKES 
1 lg. potato
1 sm. onion, chopped
1/2 lb. cod or halibut
Salt and pepper to taste
Salad oil for frying
1 egg
1/4 c. bread crumbs (a little more for coating the cakes)

Line bottom of saucepan with sliced potato. Scatter chopped onions over the potato, then put in the fish. Add enough water to cover the potato. Bring to boil, then cover and cook over medium heat until the potato is done. Drain thoroughly and cool.

Remove bones. Mash and season with salt and pepper. Stir the egg and add it and 1/4 cup bread crumbs to the fish mixture. Mix well. Form into 2 inch balls. Roll in bread crumbs. Heat oil in skillet and sauté the cakes until golden brown on all sides. Drain on paper towel.
