PEACH COBBLER 
6 peaches, peeled & halved
Sugar
Cinnamon
1/4 c. shortening
1 egg
1/4 c. milk
1/4 tsp. salt
16 graham crackers, finely crushed
1 tsp. baking powder
1/2 tsp. vanilla

Arrange peach halves in bottom of a shallow baking pan; sprinkle with sugar to taste (1/2 to 1 cup) and with cinnamon if desired. Set aside while making the batter as follows.

Cream the shortening with 1/2 cup sugar; add egg yolk, milk and salt; beat well. Mix the crushed crackers and baking powder and stir into the creamed mixture. Add the vanilla last, fold in the stiffly beaten egg white. Pour batter over the peaches. Bake in a moderately hot oven (375 degrees) for about 25 to 30 minutes. Serve hot or chilled, plain or with whipped cream.
