SPINACH BALLS 
2 (10 oz.) pkgs. frozen chopped spinach
1 (8 oz.) pkg. chicken flavored stuffing mix
1 c. grated Parmesan cheese
6 eggs, slightly beaten
3/4 c. melted butter
Salt & pepper to taste

Cook spinach and drain in sieve, pressing out as much moisture as possible. In medium bowl, combine spinach, stuffing mix, Parmesan, eggs, butter and salt and pepper. Mix thoroughly and roll into balls the size of large marbles (1 1/2" in diameter). Place on cookie sheet and freeze. When frozen, store in plastic bag in freezer. To serve: bake on cookie sheet at 350 degrees for 10 to 15 minutes or 7 to 10 minutes at 350 degrees if unfrozen until light browned. Yield: 80.
