POOR MAN'S LASAGNA | |
1/2 lb. noodles 1 lb. ground beef or turkey 1 tbsp. butter 2 (8 oz.) cans tomato sauce 1/2 lb. (1 c.) cottage cheese 1 (8 oz.) cream cheese, softened 1/4 c. sour cream 1/3 c. green onion, chopped 1 tbsp. green pepper, minced Cook noodles. Drain. Melt butter, saute meat until brown; stir in tomato sauce. Remove from heat. Combine cottage cheese, cream cheese, sour cream, green onion and green pepper. In a 2 quart casserole, spread half of noodles; cover with cheese mixture; top with remaining noodles; cover with meat mixture. Place in a 350 degree oven; bake uncovered 30 minutes or until bubbly. (The casserole may be made early in the day and refrigerated.) Bake 45 minutes or until bubbly in 375 degree oven. |
