ZUCCHINI CASSEROLE 
3 lb. zucchini (grated)
1 lb. Jack cheese (grated)
1 cube butter
2 eggs (beaten)
1 c. bread crumbs
2 tbsp. season salt
1/4 tsp. pepper

Mix all ingredients in very large bowl except bread crumbs and butter. Spoon in buttered 9 x 11 pan. Melt cube of butter in saucepan and stir in bread crumbs. Sprinkle on top of casserole mix. Bake at 350 degrees for 1 hour.
