DUCHESS OF WINDSOR
3 oz. softened cream cheese
1 egg white
1/2 lb. bacon, cooked crisply
1/2 sm. onion, grated
2 heaping tbsp. mayonnaise
2 tbsp. grated Parmesan cheese
Very thinly sliced loaf of bread (about 1/4 inch thick), some will be leftover

Freeze the bread. A food processor works best, but the rest can be mixed by hand. Mix the cream cheese and egg white in the food processor. Add bacon in small pieces, onion, mayonnaise, and grated cheese. Process until blended and bacon is crumbled. If mixing by hand, crumble bacon into small pieces before mixing in. Take bread from freezer and cut each slice into quarters. Spread with mixture. Bake at 350 degrees for about 15 minutes until golden brown.
