MAMA'S OLE TYME BANANA PUDDING 
1/2 c. sugar plus 1/4 c. sugar for whites
2 tbsp. flour
1/4 tsp. salt
2 c. milk
3 eggs, separated
1 tsp. vanilla
vanilla wafers
6 bananas

Combine 1/2 cup sugar, flour and salt. Stir in milk. Cook over low heat stirring constantly until thickened. Cook 15 minutes more stirring occasionally. Beat egg yolks and gradually stir into hot mixture. Return to heat. Cook 5 minutes stirring occasionally. Remove from heat. Add vanilla. Line bottom of casserole with vanilla wafers. Top with a layer of sliced bananas. Continue another layer of wafers and bananas. Pour pudding mixture over. Beat egg whites stiff but not dry, gradually add remaining 1/4 cup sugar and beat until mixture forms stiff peaks. Pile on top of pudding in casserole. Place additional wafers around edge.

Bake in hot oven (425°F) for 6 minutes or until delicately brown. Serve warm or chilled. Serves 6-8.
