BIG GAME JERKY 
1 to 2 lbs. venison or big game steak
1/2 c. imported soy sauce
Garlic salt

Slice steak with grain no more than 1/4 inch wide and no more than 1/2 inch thick. Dip strips in soy sauce and place on a rack in a 2-inch deep oven pot. Sprinkle generously with garlic salt.

Put into a 150-175 degree oven for 10-12 hours. Halfway through the cooking time, turn jerky pieces over. Jerky will keep indefinitely and no refrigeration is needed.
