LENTIL VEGETABLE SOUP | |
2 c. lentils 8 c. water 1/2 c. chopped onion 1/2 c. chopped celery 1/4 c. chopped carrots 3 tbsp. parsley 1 clove garlic, minced 2 1/2 tsp. salt 1 1/2 tsp. oregano custard 2 c. tomatoes Place all ingredients except tomatoes in a soup kettle. Cover and simmer 1 1/2 hours. Add tomatoes, break up any large pieces. Simmer, covered 30 minutes longer. Season to taste if desired. Serves 10. |
