COCONUT CUSTARD PIE 
2 sticks butter
6 eggs
1 c. sugar
1 tsp. vanilla
1 pkg. (16 oz.) coconut
2 deep dish pie shells, unbaked

Cream butter and sugar. Add eggs and vanilla. Beat well, then add coconut and stir well. Pour into pie shells and bake at 350 degrees for 45 minutes to 1 hour. VARIATION: Use lemon flavoring instead of vanilla.
