CHEESY BACON GRITS 
2 cups of water
1/2 cup quick grits
dash salt
1/2 cup shredded sharp cheddar cheese
1 wedge Laughing Cow Light "Creamy Swiss"
4 strips of any type bacon

Boil the water, and add grits and salt. Let it cook until the grits absorb all the water (about 6-7 minutes). Add the cheddar and Swiss (break up the wedge) and stir until it's creamy. Take it off the heat and set aside.

In a skillet, cook your bacon. I've found it works best if you almost burn your bacon, to where it's super crunchy! When the bacon is done, put it on a plate lined with a paper towel and then break it up into small pieces. Add the bacon to your grits, stir, and enjoy!
