4 c. shredded raw sweet potatoes
1 med. apple, unpeeled and chopped
1/2 c. chopped pecans
1/2 c. sour cream
1/2 c. mayonnaise
1 tsp. grated lemon rind
2 tbsp. lemon juice
2 tbsp. honey
1/4 tsp. salt
Dash of pepper

Combine first 3 ingredients in a large bowl. Stir well. Pour dressing over sweet potato mixture. Stir well. Cover and chill. Yield: 6-8 servings.
