COUSIN JOHN'S CATFISH STEW | |
2-3 lb. fileted Channel, blue or farm raised catfish 4 lg. Irish potatoes, skinned & sliced thin 4 lg. Vidalia or yellow onions, chopped Salt, black pepper, catsup & Tabasco sauce (for the daring) 2 gal. boiler for the fish 1 gal. boiler for the potatoes Begin boiling fish in a 2 gallon boiler on medium high. In a 1 gallon boiler, boil potatoes until soft. After fish have boiled, strain residue off surface of fish stock. Remove the potatoes and now place in boiler with the fish. Add chopped onions, salt and pepper. Reduce heat to medium and boil for 1+ hours until fish and potatoes flake apart. Stir often to prevent sticking. Add catsup and Tabasco when serving. Serves 4-8. |
